Georgia Peach Caprese Salad

serving of diced peaches, tomatoes, mozzarella, and basil
Try all the seasonal produce with this colorful and versatile salad!
  • 2 fresh peaches, diced
  • 15-20 grape tomatoes, quartered 
  • 4oz fresh mozzarella, diced
  • 10 fresh basil leaves, chopped
  • 1 Tbsp olive oil
  • 1-2 Tbsp balsamic glaze/vinegar 
  • Salt, to taste
  • Pepper, to taste 
  1. In a medium size bowl, add all ingredients and stir to combine.
  2. Enjoy as a salad, on toast, over greens or grains, with your protein of choice or as a pizza topping! 

Use tofu instead of cheese to create a vegan dish!
